Instant Pot Vegan Lasagna Soup

This is now in my top 5 favorite soups…. It’s basically deconstructed lasagna, what’s not to love?

What I love about this recipe is that you can throw in whatever vegetables you have on hand. My philosophy is the more colors the better πŸ˜‰ #eattherainbow

And since it’s in the Instant Pot, it’s a super easy recipe to make. As long as you remember to add all the ingredients. Confession- I was seconds away from forgetting the lentils. Which is an integral part, so I’m thankful that I remembered. Here’s everything before I seal the pot.

Everything just cooks perfectly, and in only 3 minutes, the noodles and vegetables were just the right consistency.

I doubled the recipe because I love leftovers. I have a love/hate relationship with nutritional yeast so I didn’t double that. There seems to be a fine line of when too much is WAY too much! So this was perfect πŸ™‚

Instant Pot Ricotta Cheese Cheesecake with Lemon Curd

Oh. My. Word. After being back on strict no sugar for Lent, this was absolutely wonderful for Easter.

One of the first things you do when you get an Instant Pot is join all the Facebook groups right? Well, that’s what I did. And one of the most repeated recipes I saw over the past year was cheesecake. It was time to try it.

This was the recipe I followed.

What inspired me for this specific recipe was that I also made my own ricotta cheese, who knew that was even a thing? And lemon curd.

Before comes the cheesecake, must come the ricotta cheese.

I used limes for the acid; although the recipe suggests limes, lemons or vinegar.

And no, this wasn’t from tequila shots. πŸ˜‚

It only has to strain through the cheesecloth for 3 minutes.

And before you know it, the milk and limes have been transformed into ricotta cheese.

I then began measuring everything out for the cheesecake…. Houston, we have a problem. The recipe calls for 1 lb of ricotta cheese and I only ended up with about 12 ounces. So I halved my cheesecake recipe. Wipe away the tears. And since I halved it, I used mason jars. Super cute.

Now, onto the lemon curd. I really didn’t know what to expect. I don’t think I’ve ever even eaten it before. But, how can you go wrong with butter, sugar and lemon?

Again, I was surprised at how simple this was. Too simple. I can’t make this often cause I won’t be able to stay out of it. πŸ˜‰

Instant Pot Wine

Yes, I jumped on the bandwagon. Just had to see what all the hype was about. Now I can add winemaker to my ever growing list of talents, lol

I ordered the yeast from Amazon and almost assaulted my poor UPS guy the day it was delivered. I was so excited to get started, even knowing it was not a quick process. I already had purchased the grape juice and it was getting so lonely sitting on the counter.

The beginning of the process.

Once all the ingredients are in the pot and set on the low yogurt setting, I had to alternate venting and sealing it every 8 hours for a full 48 hours.

After 48 hours. The almost-wine is poured back into the grape juice bottle to sit. I’m sure this is used as a decoy because if it was put into a wine bottle, everyone would know. How sneaky πŸ™‚ Notice how cloudy it looks. And the tape is there to hold the lid in place since you can’t screw it on tight or it could explode off. And not only would that make the mess of the century, but what a waste of perfectly good wine. It definitely smells like wine.

Now I put in a dark section of my pantry to work its’ magic. I check it after 10 days.

I don’t love it. I don’t hate it. I bet the more I drink, the better it will taste, right? Cheers πŸ™‚

Corned Beef and Cabbage

Yes, you read that right – corned beef and cabbage. And it was the real deal, nothing out of the ordinary was used. No fun substitutions of nuts, seeds beans or tofu. How boring.

My family was pleased πŸ™‚ And go figure, the potatoes were my favorite πŸ˜‰

This was a leave it and forget it, which was just what I needed on this busy day.
