Have I mentioned before how much I love the Thug Kitchen cookbook?
Yup, still do! This was almost too easy to make and super tasty. The oven did all the work! Confession time- I couldn’t stop eating the broccoli when it came out of the oven.
I used the standard toppings- green is good!
The recipe actually called for this to be a burrito, but I made it into a bowl using the Quinoa and Brown Rice by Seeds of Change (thank you Costco!)
*Update- this was so good, I made it again a few days later 🙂
