Fond memories of travel days and hopeful it will on the horizon again soon. One of my most cherished trips was a stopover in Iceland coming home from a Swiss bike adventure. Three days to explore a country through eating and walking! Yes, please! So having March be Scandanavia month brought back such joyful memories, with food being a highlight! The infamous fish stew was another favorite which I cooked for the first time this month following my best friend’s recipe that she recreated from our trip for the Salmon Trout Steelheader magazine.
